This Mexican Style Creamed Corn recipe is super easy to make and gives a little twist on the basic creamed corn side dish. We love corn any way you want to fix it. But, sometimes you might get tired of the same old way of fixing it. This super easy Mexican Style Cream Corn recipe only takes a few minutes to make! Depending on your family, you can make it as hot or mild as you would like!
Mexican Style Creamed Corn
1 10 oz. pkg. frozen whole kernal corn
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/4 cup soft style cream cheese
1/2 of a 4 oz. can diced green chili peppers
1 tbl. milk
1/4 tsp. salt
pepper to taste
cayenne pepper to taste, if desired
1. In a medium saucepan or small skillet, combine corn, green pepper, red pepper and 1/2 cup of water.
2. Cook 5 minutes until corn is tender.
3. Drain. Stir in cream cheese, chili peppers, milk, salt, and pepper and cayenne pepper (if desired).
4. Heat through.
