Crock Pot Pinto Beans with Stewed Tomatoes is absolutely one of the easiest meals to prepare. Maybe I should say we eat it as a meal, along with some homemade cornbread. I am all for anything I can cook in the crock pot!
Crock Pot Pinto Beans with Stewed Tomatoes
1 lb pkg. dry Pinto Beans
2 cans stewed tomatoes – we use canned stewed tomatoes from our garden
Ham pieces or bacon (your choice)
Jalapenos (optional) – We use dehydrated ones from our garden.
Onion Powder – sprinkle enough to cover the water
Garlic Powder – sprinkle enough to cover the water
Sort beans and rinse. Put beans into crock pot and fill 3/4 of the way with water. Add meat, onion powder, garlic powder, salt, pepper and a handful of the jalapenos.
Cook on high for 3 hours. Add the tomatoes.
Continue cooking for another 3 or 4 hours.
Serve with homemade cornbread.
