Do you love pretty dishes? I do! As a matter of fact, I am slightly addicted to pretty dishes. Not many of you know, but I grew up with my Grandmother. Grandmommas are always about the food! Don’t you think? I know you never came to my Grandmother’s house that you weren’t offered a meal, dessert, or something! She didn’t want anyone being hungry, so you would never go away hungry from her house! My Grandma loved pretty dishes. She was always looking for, and picking up, pretty dishes, serving bowls and glasses. She wanted her table set and she wanted it to look good and inviting. I’m guess that’s where I got it from. I wanted to show you the meal we had using our festive Santa Fe Stoneware. It’s going to be the perfect supper for our Cinco de Mayo celebration too! It involves some quick and easy recipes that you will love. If you love Mexican food, then these recipes are sure to please! I’m almost sure my meal would not have been the same on my boring dishes. The Sante Fe Stoneware absolutely set the mood!

Don’t let it fool you! This is one of the simplest and easiest meals to make! Here’s what it will take to make this delicious meal. Served on this festive Santa Fe Dinnerware, you will feel like you are in a Mexican restaurant! It’s the perfect meal, and perfect dishes, for the occasion!
Smothered Burrito, Tacos and Pico de Gallo
XX Large El Monterey Spicy Chimichanga
Chili (we used leftover homemade, but canned chili will work as well)
Shredded Cheddar Cheese
Jalapeneos (we used home canned ones)
Microwave, or heat, Chimichanga. Place in center of plate.
Cover with chili. Top with shredded cheese, onion and jalapeneos.
Pico de Gallo
1 Medium Tomato, diced (Roma tomatoes work best)
1 Small Onion, finely diced
1 Green Onion, chopped fine
2-3 sprigs of Cilantro, chopped fine
Jalapenos, chopped fine – to taste (we used canned from the garden, but you can also use fresh)
1/4 tsp. Garlic powder
1/8 tsp. Salt
1/8 tsp. Pepper
Lime juice (if desired) – I have family members that doesn’t like it added, so we leave it out.
Combine the tomato, onion, Cilantro and jalapeno and stir together. Season with the garlic powder, salt and pepper (if lime juice is desired, add here). Stir until mixed thoroughly. Refrigerate for 30 minutes to allow flavors to meld.
Serve on a bed of shredded lettuce. Add a dallop of sour cream and guacamole, if desired. Then add a heaping helping of the Pica de Gallo to the top.
Taco Seasoning packet
Sour Cream, if desired
Cook ground beef until no longer pink. Add Taco Seasoning and water, as directed on package. Build your tacos, starting with ground beef mixture, lettuce and shredded cheese. Add sour cream and taco sauce.
Putting it all together:
Place your Chimichanga in the middle of the plate and add the chili and then the cheddar cheese, onions, jalapenos and sour cream. On either side, add a couple of tacos. Then, on the other side add a bed of lettuce. Add a dallop of sour cream. Beside this, add a dallop of guacamole. Then, spoon the Pica de Gallo over the top. Serve with a bowl of salsa surrounded by chips.
The food was delicious and the bright, colorful dishes really set the mood! Do I need to say it? I love the Santa Fe Stoneware Collection! And, going beyond the coming Cinco de Mayo holiday, these are such fun colors for summer, that I am going to have a ball with them! Funny how food taste better on pretty dishes! Maybe my Grandmother was on to something after all with her pretty dishes! The Santa Fe Stoneware is fun, bright, and cheerful and has quickly became my favorite. For any hostess, or anyone having a party, they are perfect! I am seeing some awesome Summer barbeques happening with them! Oh heck, who am I kidding? I love them for everyday use too!!!
