After begging for a reprieve from last years scorching summer, my spirits were lifted when the cool finally weather rolled in. When the first snow came, my family and I were excited. But, after several long months of the seemingly never-ending winter, I am more than ready to welcome Spring! After all, there’s only so much snow, sleet and cold you can take before you start daydreaming of warmer temperatures again. Spring will bring the return of our favorite wildlife, along with their babies that had been born in their absence from our lives. The birds will return, busily build their nest and lay their eggs. The air will be filled with the musical sound of their chirping. I will begin to dream in pastels – pinks, blues, greens, purples, etc. and dream of the sun on my face.
One of my favorite ways to welcome the much anticipated season is by baking up an array of goodies that taste of Spring, such as this totally cute and delicious recipe I call Bird’s Nest Cookies. Whether you’re looking for a recipe to amuse your little ones, or to use as a centerpiece for an upcoming Spring time party, these adorable and easy Bird’s Nest Cookies, using Nestle Toll House Refrigerated Cookie Dough are a hit with any crowd! Easy Spring Time ‘Bird’s Nest Cookies’
Ingredients & Supplies:
Nestle Rolled & Ready Cookie Dough
Gel food coloring in leaf green
Candy coated chocolate eggs (plus enough for eating while you work)
Nestle Chocolate Chips
2 Piping bags and tip fittings
#2 round frosting tip
Bake the cookies according to instructions on the package and allow to cool.
Begin by laying cooled cookies on parchment paper on a flat work surface.
Prepare your royal icing and mix a generous amount of food coloring to make a spring green color. I like to use gel food coloring for all my projects because it does not change the consistency of the icing at all.
Begin by attaching a #2 round tip to your piping bag and your green icing. Pipe a thin line of icing around the outside of each cookie.
After all of the cookies have a border, empty the remaining icing into a bowl. Add a few drops of water to thin the icing. The icing should be thin but not runny. When you drizzle a spoonful back into your bowl it should blend back into the rest of the icing in about 10 seconds.
Spoon a small amount of icing onto the first cookie. Use a toothpick to smooth the icing out to meet the border.
Set the cookie aside to dry.
Continue working through the cookies one at a time.
While the icing is drying on the cookies, fill the other piping bag approximately half full with chocolate chips and microwave for 30 seconds. Squeeze the chocolate chips to mix and microwave for an additional 20 seconds or until the chocolate is smooth and completely melted.
Cut a tiny bit of the tip of the piping bag. You’ll build the nest in layers. Drizzle the chocolate in a circular motion onto the center of each cookie.
Place the cookies in the freezer for a few minutes to let the chocolate harden.
Remove from the freezer and drizzle another layer of chocolate on. Return to the freezer. Repeat until the nest takes shape.
Set the candy eggs into the nest using chocolate to secure them. Continue drizzling chocolate around the eggs to finish building the nest.
I added a few small flower shaped sprinkles to each nest for a special finishing touch!
