Football season is coming to a close and the big Super Bowl will be here very soon! In planning our Super Bowl party, I have been experimenting with recipes and came up with one that will BLOW YOU AWAY! You’ve seen all kinds of recipes that include candies, but have you seen one using Skittles? Well, Skittles is here to Make Super Bowl 50 Even Sweeter. I decided to use Skittles to enhance a very simple cheesecake recipe and make some yummy Skittles Cheesecake Pops to decorate my Super Bowl 50 party table! What better way to make Super Bowl 50 Even Sweeter?
We were planning quite a party, so I knew I needed large quantities of candy to help fill out my party table. After all, the Super Bowl only happens once a year and we definitely didn’t want to run out of snacks and sweets! Since Skittles is an official sponsor of the NFL/Super Bowl this year, it seemed only fitting to try my idea of a Skittles Cheesecake! With images of Cheesecake and Skittles Cheesecake Pops in my head, I headed to my favorite place to shop – Amazon! And, yes, I am spoiled to Amazon because I can quickly order what I want from the comfort of my own home and go on about my day! Easey-peasey!
So, I jumped on amazon and quickly found exactly what I was looking for! I was able to pick up a 2-pack of 41-ounce bags of Skittles Original candy, MARS Chocolate Minis Variety Mix in a 2-pack of 40-Ounce Bags, and a 40-ounce bag of TWIX Minis Caramel and Chocolate Candy. These would give me what I needed for my Skittles Cake Pop recipe and have plenty of ooey, gooey, chocolate sweet treats for the big game day! By shopping on Amazon, it made ordering easy and it only took a couple of days to arrive. While I waited on the order to arrive, I finished planning my party details.
Making and incorporating Skittles into this cheesecake recipe was not as easy as I thought it would be. I figured I could melt them down and flavor the cheesecake. However, as soon as the melted Skittles hit the cold cheesecake mixture, they immediately hardened back up. Then, I thought I could use the Skittles as a base for a large cheesecake. But, the Skittles do not refrigerate well. The moisture and sugars made the colors bleed onto the white cheesecake.
So, back to the drawing board I went. After giving it a lot of thought, I decided to make Skittles Cheesecake Pops and see if I could roll chopped Skittles pieces onto them as a crunchy sweet topping. BINGO!!!! What an amazing presentation these made!
Crunchy Skittles Topping for the Cheesecake Pops
Crushing Skittles scared me a little because of their soft center. I figured that they wouldn’t crush, but would smear and stick together. However, using a food chopper, I was able to crush them in a fast way that didn’t allow them to mush together. Perfection! The crushed Skittles would now make a nice crunchy topping for the Cheesecake Pops!
Skittles Cheesecake Pops Recipe
I whipped my room temperature whipped topping (8 oz) with my room temperature cream cheese (8 oz). This is VERY important. Ingredients MUST be room temperature. If they are cold, they don’t combine well and the mixture will be lumpy. And, lumpy cheesecake is just not good.
I happen to have a cake pop pan that I had purchased a few years ago, when cake pop ideas were popular. This pan comes in two pieces so that you can fill the pops from the top and then separate the top pan from the bottom to remove them.
Using an icing bag, (the kind that is used by bakers to frost cakes), I placed a tip on the bag, filled it with the cheesecake mixture and started filling the cake pop pan from the top. After filling all the holes, I placed popsicle sticks in the holes so that my pops would be a POP!
In order to make them firm back up, (the mixture is very soupy at this point), I placed the filled cake pop pan in the freezer for 3 hours.
After they had firmed back up, I removed them from the pan and rolled them in the crushed Skittles.
In order to hold and display the Skittles Cheesecake Pops, I used a 4” half foam ball to stick them in. This makes a great holder for the cheesecake pops because placing them on a tray will mess them up. Please note: the foam ball holder will fall over if it gets off balance, so make sure you place them in a way that it doesn’t fall over.
Football decorations are everywhere right now and I found these great disposal football plates which were perfect for displaying my Skittles Cheesecake Pops! I placed the foam ball with the cake pops in the center and then used the remaining Skittles to camouflage the white foam. This disguised the foam holder and looks so sweet and edible! My friends and family will definitely love these for our Super Bowl 50 Sunday!
