Whether you’re looking for a breakfast or brunch idea, a frittata or open faced omelet, is a great option. A frittata is an Italian dish made from primarily eggs. It’s similar to an omelet or quiche without the crust. You can add any ingredients you like including meats and veggies, but this Caprese Frittata is a favorite. It’s quick, easy and most importantly – delicious!
Caprese Frittata
Ingredients:
3 eggs
1/8 medium red onion
½ cup fresh spinach
fresh basil to taste
½ medium tomato
¼ cup diced mozzarella cheese
salt and pepper to taste
½ tbsp olive oil
Makes 1 6” frittata
Instructions:
Finely chop the red onion.
Coarsely cut the spinach and basil.
Dice the tomato into ½” pieces.
Heat olive oil in a small skillet over medium to high heat.
Whisk the 3 eggs together and pour into oiled and preheated pan.
Allow the eggs to begin cooking. They should be bubbling and no longer transparent.
Sprinkle the veggies and cheese on top of the eggs and let cook for 1-2 minutes.
Cover and continue cooking for 4-5 minutes or until cheese is melted and egg becomes golden brown.
Remove from heat and transfer to your serving plate.
This delicious frittata is ideal for an individual serving or to share.
