Scalloped Potatoes and Ham Casserole is a Family Favorite

Scalloped Potatoes and Ham Casserole is the perfect side dish for any meal. It’s an easy recipe that cooks in the oven while the rest of the meal is being prepared. It adds a little more to the meal than just plain fried or mashed potatoes. This casserole is also a great recipe to take for family gatherings, especially for holiday dinners!

Scalloped Potatoes and Ham Casserole

Ingredients:

Redskin Potatoes
Spiral Cut Ham
Red Onions
Milk
Corn Starch (or all purpose flour)
Salt
Butter
Pepper

Instructions:

1. Quarter and cut potatoes into slices 1/16” to 1/8” thick. If the slices are too thin, the potatoes will be mushy, if they are too thick cooking time will increase Slice enough to cover the dish about 1 ½” deep. Rinse and dry potatoes thoroughly. If the potatoes are too wet, they will get mushy.

2. Halve and skin onion, then cut into slices 1/16” to 1/8” thick.

3. Slice ham and dice if desired.

4. Place a layer of potatoes in the bottom of a well buttered casserole dish and spread onions and ham on it. Place a few pats of butter on top then sprinkle about a tablespoon of corn starch over it. Repeat until all ingredients are gone.

5. Fill the dish about 1/3rd of the depth of the potatoes with milk and sprinkle corn starch on the top.

6. Place in center of oven at 375 degrees for about 40 minutes. Dish is cooked when the milk is completely thickened and potatoes are cooked but still firm.

Enjoy!

That’s a good way to use up extra ham. I love ham and potato dishes with cheese. I’ll have to try this. Minus the onion.

(Scalloped Potatoes and Ham Casserole is a Family Favorite) These scalloped potatoes sure do look good, I make these all the time for my family as well. Sure beats those boxed ones from the store-
