Loaded Potato Soup using Instant Potatoes
Ingredients
1 box or 1 1/2 Envelopes Betty Crocker Garlic Mashed Potatoes
2 cans Evaporated Milk
1 can Swanson Chicken Broth
6 slices Bacon
8 oz Shredded Sharp Cheddar Cheese
1/2 medium Onion diced
5 cups water
Directions
Chop your bacon into small squares (approximately 1/2″) and cook in a large pot (large enough to cook the soup).
Let this render and then add the onion.
Cook until onion is tender.
Add chicken broth and water and bring to a boil.
Reduce the heat and add evaporated milk, stirring in potatoes.
Add shredded cheese and continue stirring.
If consistency seems too thick, add a bit of milk to thin it to the thickness you like.
Cook over medium heat, stirring occasionally until it gets to serving temperature.
Garnish with fried bacon, cheddar cheese and green onions or parsley (we prefer the green onions).
Enjoy!

This looks wonderful, and so easy! Thanks for sharing.
What is the size or sizes of the potatoes you use?

I use instant potatoes to thicken my potato soup. This looks quick and easy!
Genius! We absolutely love Potato Soup but it can be a huge pain to make dealing with a big bag of potatoes. This makes it so much easier and faster too! I love those Betty Crocker potatoes and we eat them all the time. So I have no doubt that they would taste great. I cannot wait to make this though it will probably when it gets a bit colder.

I want to try this recipe! But I only have really large boxes of instant potatoes. How many cups of instant potatoes should i use?
Good question. Maybe check the box to see, but my guess would be around 2 cups. You may have to adjust the liquid from there.
