Breakfast foods are my favorite foods! I may not always eat them at normal breakfast time, actually I prefer them for supper. Is anyone with me on this? Normally, when you think of a breakfast sandwich, ideas of biscuits, eggs and bacon may come to mind. But, have you ever thought about using waffles instead of biscuits? Check out this easy recipe for a Waffle Breakfast Sandwich! Same egg and bacon, but with a twist of a waffle. And, you can even add the sweet taste of some syrup if you want! If you love waffles, you may also want to check out this Biscuit Waffles and Maple Sausage Gravy Recipe! YUM!
Waffle Breakfast Sandwich Recipe
Ingredients
8 (2 slices) Eggo Mini Waffles
1 Slice Bacon, cooked crispy and cut into 4 pieces
1 Egg, beaten
Colby Jack Cheese, sliced ¼ inch thick into squares
Instructions
Cook the waffles according to directions on the package and separate.
Scramble the egg in a nonstick pan over medium heat. When the egg is almost completely cooked, arrange it in as close to a 2×2 inch square as you can. Let it sit about 20 seconds and then flip and cook another 2 seconds. This will cause the eggs to set in the square shape.
Cut the egg into 4 – 1 inch squares. Then place on 4 of the waffles.
Place a cheese square and then a piece of bacon on top of the eggs.
Top the whole shabang with a second waffle.
Enjoy!
*Optional: Add ¼ teas. of syrup to the bottom waffle for a sweet and salty treat.
