Homemade Sugar Cookies
Ingredients
1 cup sugar
1/2 cup butter, softened
1⁄2 cup coconut oil, solid
3 tablespoons of heavy whipping cream
1 tablespoon vanilla extract
1 egg
1-1⁄2 teaspoons baking powder
1⁄2 teaspoon sea salt
3 cups all-purpose flour
1⁄2 cup of powdered sugar, for use in rolling out the dough (cornstarch, instead of powdered sugar, can be used if desired)
Directions
Using a large bowl, combine the sugar, softened butter, solid coconut oil, and whipping cream. After scraping down the sides of the bowl, beat on medium-high for approximately 1 minute with a mixer to whip in some air.
Add the vanilla, egg, baking powder, and sea salt, and mix together well.
Using the mixer on low, slowly add in flour 1⁄2 cup at a time. After each addition, scrape the sides down. Mix well.
Once mixed, split the dough into three equal pieces. Wrap each third in plastic wrap or you can also place in ziploc bags. At this point, you could also freeze the dough. This is nice if you want to wait and bake them later. If baking now, place them in the refrigerator and allow them to rest for 1 hour. This will allow the dough to stiffen a little and the butter won’t melt too easily.
Heat oven to 400 degrees. To aid in the cookies baking evenly, line the cookie sheets with a baking mat or parchment paper.
Sprinkle the powdered sugar (or cornstarch), whichever you are using, lightly on the rolling surface. Work with one of the thirds at a time and leave the other two in the fridge for now.
Roll the dough out to about 1⁄8 inch thickness. Use the powered sugar to dust the cookie cutter and cut out your cookies. Place them about an inch apart on the lined pans.
Bake at 400 degrees for 5 to 9 minutes. The edges will be lightly browned.
Let the cookies cool on the pan for a couple of minutes, then move them to a cooling rack to finish cooling completely.
Enjoy!
Tip: Allow your cookies sheets to cool completely between batches. If you place cold dough on a warm cookie sheet, the cookies will spread too quickly.
