Chicken Bacon Bombs
Ingredients:
12 oz bacon
2-3 large chicken breasts
8 oz cream cheese
Optional – thinly sliced jalapeno peppers
Instructions:
Partially cook the bacon in a large skillet. You’ll want to leave it slightly undercooked and soft as you’ll be wrapping it around the chicken. Remove the bacon from the skillet and set aside.
Cut the chicken breasts into large chunks. You want to leave them slightly thick as you’ll be cutting them after they are cooked and stuffing them. Cook the chicken chunks in a large skillet over medium heat until the internal temperature reaches 165 degrees. I cooked mine in the same skillet as the bacon rather than using oil or another fat for cooking (lots of flavor but not so healthy).
When the chicken is fully cooked remove it from the heat and allow it to cool enough to handle. When it is cool enough to work with carefully slice an opening in each piece.
Place a spoonful of cream cheese into each chicken piece. I also placed a thin slice of jalapeno pepper for some extra flavor in each chicken piece.
Wrap each filled chicken piece with the cooled bacon. Use a toothpick to secure if necessary. Place the chicken pieces on a metal rack inside a cookie sheet and place in the oven. Broil on high until the bacon is crisp.
Enjoy!

WOW…those look awesome! Definitely a recipe I’m going to try!
Great recipe, I do one very similar to this as a main dish, but I use herb cream cheese and add a little white wine to the oven dish which creates a lovely sauce, perfect with mashed potatoes! I never thought to add jalapeños to it. I will definitely have to try that out! Thanks for sharing — Romany
This looks dangerous because I’d want to eat it all the time. (Who needs an excuse to eat bacon?!)

These look so good. I’m gonna make them soon.
Thanks so much for the delicious recipe on Chicken Bacon Bombs! These don’t seem too hard to make and they look fantastic! We are not fans of jalapeno peppers. We grow them every year in our vegetable garden, however, they are too hot for us to eat! We grow these for our relatives! I could most likely use a regular green pepper instead! That way I know they will get eaten! It’s funny because most of the recipes I find online are usually Chicken recipes. My husband does not like or eat chicken whatsoever. The kids and I love it! But, I don’t make it very much because of my husband! Thanks again for sharing your delicious recipe on Chicken Bacon Bombs Recipe with all of us! I truly do appreciate it! Thanks very much! Michele
ooh, awesome, always looking for quick easy ways to use my two favs, bacon and cream cheese!
I would love to make this for my family and see if they would like it.I like trying new recipes, but it’s hard when you have picky eaters and have to find something they would all like.I might even do this during football season.
These look delicious and would certainly be enough for my husband and I as a main dish. I love the cream cheese and my husband could do the peppers, but not me, no way! My only concern is not cutting the chicken breast correctly. But I am willing to give it a try.
OMGosh, they sound amazing!! Going to have my aunt make this, she’s the cook around here!!
Ohhhh, these look so good! Thank you for sharing the recipe.
Where I worked they wrapped chicken pieces in bacon, and it was delicious, love the cream cheese. Thank you for sharing, I will try these.
