Strawberry Fields Salad with Honey Balsamic Vinaigrette Recipe

With Summer here and all the fresh veggies and fruit available what could be better than a delicious salad? Who am I kidding though? It doesn’t matter what time of year it is, I LOVE salads! However, they are always tastier with fresh veggies. You also know of my love for strawberries! This Strawberry Fields Salad with Honey Balsamic Vinaigrette Dressing incorporates my love of salad and strawberries all in one delicious dish! It will definitely have your taste buds singing in happiness!

Strawberry Fields Salad with Honey Balsamic Vinaigrette Recipe

DRESSING:

Ingredients:

1/4 cup balsamic vinegar
2 tablespoons honey
1/2 cup olive oil
2 tbs of poppy seeds
salt and ground black pepper to taste

Directions:

Stir the balsamic vinegar and honey together in a bowl.

Slowly stream the olive oil into the mixture, while whisking continuously.

Stir in the poppy seeds.

SALAD

Ingredients:

1 bag of spring mix salad
1 cup sliced fresh strawberries
1/2 cup crumbled Gorgonzola cheese
1/2 cup of Red Onion chopped
1/2 cup of walnuts

Directions:

Place the spring mix in a large bowl. Add chopped Red onions, Walnuts, and Strawberries.

Place crumbled Gorgonzola on top.

Drizzle the Honey poppy seed dressing over the top.
