Notes:
All ovens are different, so I suggest testing one by itself or closely watching your first batch. In my oven, six minutes on each side was perfect, but you’ll want to check yours after five minutes. Also, don’t leave them in the oven until they are completely hard. They will continue to firm up after you remove them from the oven and cool.
This is a great way to use up pita bread that is starting to go stale.
Pita chips are nice and sturdy, so they’re perfect for thicker dips like cheese balls, guacamole, or bean dip.
The seasonings will fall to the bottom of the olive oil, so give it a little stir with your brush each time you go in for more.
You only need a very thin layer of oil on the pita bread. If you add too much, the chips will be greasy.
If you like things spicy, you could also add a quarter teaspoon of cayenne pepper to the seasonings. Alternately, you could leave the seasonings out altogether for a more basic pita chip. Just sprinkle a little salt on them before baking.
You could do the same thing with flour or corn tortillas as well. However, they’ll cook a little faster, so you’ll need to adjust the cooking time.
