I believe I have found a new favorite breakfast food! These Cranberry Muffins are so delicious straight from the oven with a hot cup of coffee! Oh yea! My mouth is watering just thinking about them! And, did I mention how easy they are to make? Yep! In ten minutes or less, you can have them stirred up and in the oven baking! Cranberry Muffins make a delicious addition to the breakfast table during the holidays too! So, now to decide which is my favorite – these Cranberry Muffins or the Strawberry Cheesecake Muffins I love so much! Which one would you choose?
Cranberry Muffins
Ingredients
2 cups Flour
3/4 cup Brown Sugar
2 tsp Baking Powder
2 Eggs
3/4 cup Orange Juice
1/3 cup Vegetable Oil
1 cup chopped Cranberries
Directions
Preheat your oven to 375.
Line the muffin pan with paper liners.
Mix together the flour, brown sugar and baking powder. Set aside.
In a separate bowl, beat together eggs, orange juice and oil.
Add the wet ingredients to the dry ingredients and mix just until moistened.
Fold in the cranberries.
Spoon into prepared muffin pan.
Bake for approximately 20 minutes or until golden brown.
Take out and cool on a wire rack.
Enjoy!
